  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup
  • 1 cup almond flour
  • 2 large eggs
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Boil or steam the sweet potatoes until fork-tender. Let cool slightly, then peel and mash.
  3. In a mixing bowl, combine the mashed sweet potatoes, cocoa powder, maple syrup, almond flour, eggs, and baking powder until smooth.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool in the pan for at least 10 minutes before cutting into squares.
